Ingredients

  • 4 whole Fresh artichokes
  • 2 whole Lemon
  • 4 cloves Garlic cloves
  • 0.25 cup Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Start by preparing the artichokes. With a sharp knife, cut 1 inch off the top and trim the stems to 1 inch long. Remove the tough outer leaves and snip the tips of remaining leaves to remove thorns.

Cut each artichoke in half lengthwise. Use a spoon to scoop out the fuzzy choke and small purple leaves in the center.

Step 3

Fill a large pot with water and squeeze the juice of 1 lemon into it to prevent browning. Bring the water to a boil.

Add the artichokes to the boiling water and cook for 10 minutes to tenderize them slightly.
