Ingredients

  • 2 cups Gluten-free all-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 3 tablespoons Granulated sugar
  • 0.5 cup Unsalted butter or dairy-free spread
  • 0.75 cup Cold unsweetened almond milk
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 0.5 cup Dried fruit (e.g., raisins, cranberries) or nuts (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the gluten-free all-purpose flour, baking powder, salt, and granulated sugar.

Step 3

Add the unsalted butter or dairy-free spread into the bowl. Using a pastry cutter or your fingers, work the butter into the dry ingredients until the mixture resembles coarse crumbs.

Step 4

In a small bowl, whisk together the cold almond milk, egg, and vanilla extract until combined.

Step 5

Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently until the dough starts to come together. If you're adding dried fruit or nuts, fold them in at this stage.

Step 6

Turn the dough out onto a lightly floured surface and knead gently to bring it together. Pat the dough into a circle about 1 inch thick.

Step 7

Cut the circle into 8 equal wedges and place them on the prepared baking sheet, spacing them a few inches apart.

Step 8

Bake in the preheated oven for 15-20 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean.

Step 9

Remove from the oven and allow the scones to cool on a wire rack for a few minutes before serving. Enjoy warm or at room temperature.
