Ingredients

  • 1.5 cups Gluten-free all-purpose flour
  • 0.5 cups Almond flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 1 cup Unsalted butter, softened
  • 1.5 cups Granulated sugar
  • 4 items Large eggs
  • 2 teaspoons Vanilla extract
  • 0.5 cups Milk (or any non-dairy milk)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan with gluten-free flour to prevent sticking.

Step 2

In a medium bowl, whisk together the gluten-free all-purpose flour, almond flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, beat the softened butter on medium-high speed until creamy, about 1 minute.

Step 4

Gradually add the sugar to the butter, continuing to beat until the mixture is fluffy and light in color, about 3-4 minutes.

Step 5

Add in the eggs one at a time, beating well after each addition, until fully incorporated.

Step 6

Mix in the vanilla extract.

Step 7

Slowly add the dry ingredients to the wet mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix only until just combined, being careful not to overmix.

Step 8

Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

Step 9

Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 10

Remove the cake from the oven and let it cool in the pan for about 15 minutes before transferring to a wire rack to cool completely.
