Ingredients

  • 1.5 cups Almond flour
  • 0.25 cups Coconut flour
  • 2 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 0.5 teaspoons Ground cinnamon
  • 0.5 cups Coconut sugar
  • 3 whole Large eggs
  • 0.5 cups Coconut milk
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Apple cider vinegar
  • 3 tablespoons Coconut oil, melted

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a donut pan with coconut oil or non-stick spray.

Step 2

In a large mixing bowl, whisk together almond flour, coconut flour, baking powder, salt, ground cinnamon, and coconut sugar until well combined.

Step 3

In a separate bowl, beat the eggs lightly, then add coconut milk, vanilla extract, apple cider vinegar, and melted coconut oil; mix until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and stir until a thick batter forms.

Step 5

Spoon the batter into a piping bag or a plastic zip-top bag. Cut the tip and pipe the batter evenly into the prepared donut pan, filling each cavity about 3/4 full.

Step 6

Bake in the preheated oven for 18-20 minutes, or until the donuts are lightly golden and a toothpick inserted into the center comes out clean.

Step 7

Let the donuts cool in the pan for 5 minutes, then carefully remove them and place on a wire rack to cool completely.

Step 8

Optionally, glaze with a mixture of powdered sugar and water or top with your favorite soy-free, gluten-free toppings.
