Ingredients

  • 2 cups Dried red beans
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, chopped
  • 4 Garlic cloves, minced
  • 1 medium Green bell pepper, chopped
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Paprika
  • 2 Bay leaves
  • 6 cups Vegetable broth
  • 1 teaspoon Salt
  • 0.25 cup Fresh cilantro, chopped
  • 1 Lime, juiced

Directions

Step 1

Rinse the dried red beans thoroughly under cold running water. Place them in a large bowl and cover with water by several inches. Let them soak overnight or for at least 8 hours.

Step 2

Drain and rinse the soaked beans, then set them aside.

Step 3

In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook for about 5 minutes, until softened and translucent.

Step 4

Add the minced garlic and chopped green bell pepper to the pot. Stir and cook for another 3 minutes until the vegetables are fragrant.

Step 5

Stir in the ground cumin, ground coriander, and paprika. Cook for 1 minute to toast the spices.

Step 6

Add the soaked and drained red beans to the pot along with the bay leaves.

Step 7

Pour in the vegetable broth, ensuring the beans are completely covered. Bring the mixture to a boil over medium-high heat.

Step 8

Once boiling, reduce the heat to low and cover the pot. Simmer the beans gently for about 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add more broth or water if necessary to keep the beans submerged.

Step 9

After the beans are cooked through, remove the bay leaves and season with salt to taste.

Step 10

Stir in the chopped fresh cilantro and lime juice. Adjust seasoning if needed.

Step 11

Serve the Soy-Free Frijoles Rojos warm. Enjoy as a side or over rice as a main dish.
