Ingredients

  • 4 ears Fresh corn on the cob
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 1 small Red bell pepper
  • 0.5 small Red onion
  • 0.25 cup Fresh cilantro leaves
  • 3 tablespoons Lime juice
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper

Directions

Step 1

Shuck the corn by removing all husks and silks. Rinse the ears under cool running water.

Step 2

Bring a large pot of water to a boil. Add the corn ears and boil for 5 minutes. Remove the corn and let it cool slightly.

While the corn cools, halve the cherry tomatoes and set aside.

Peel strips along the cucumber's length for a decorative edge, then dice it into small cubes.
