  • 1 medium, diced Onion
  • 3 minced Garlic cloves

  • 1 tablespoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Baking powder
  • 3 tablespoons All-purpose flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Olive oil

Directions

Step 1

Rinse the green lentils under cold water. Place them in a pot with 2 cups of water and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes, or until the lentils are tender but not mushy. Drain and let cool.

Step 2

In a food processor, combine the cooked lentils, diced onion, minced garlic, chopped parsley, ground cumin, and ground coriander. Pulse until the mixture is well combined but still slightly coarse for texture.
