Ingredients

  • 4 cups Green cabbage
  • 2 cups Red cabbage
  • 2 medium Carrots
  • 1 medium Red bell pepper
  • 0.5 cup Fresh cilantro
  • 0.25 cup Fresh lime juice
  • 2 tablespoons Apple cider vinegar
  • 2 tablespoons Olive oil
  • 1 tablespoon Honey
  • 1 teaspoon Garlic powder
  • 1 teaspoon Cumin
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 small Jalapeño (optional)

Directions

Step 1

1. Start by preparing the vegetables. Slice the green and red cabbage into thin shreds using a sharp knife or a mandoline slicer.

Step 2

2. Peel the carrots and grate them using a box grater or food processor.

Step 3

3. Remove the seeds from the red bell pepper and finely dice it.

Step 4

4. If using jalapeño, slice it thinly and remove the seeds for less heat.

Step 5

5. Finely chop the fresh cilantro leaves.

Step 6

6. In a large mixing bowl, combine the shredded green cabbage, red cabbage, grated carrots, diced bell pepper, cilantro, and jalapeño (if using). Toss them together until evenly mixed.

Step 7

7. Prepare the dressing: In a small bowl, whisk together lime juice, apple cider vinegar, olive oil, honey, garlic powder, cumin, salt, and black pepper until smooth and well combined.

Step 8

8. Pour the dressing over the cabbage mixture in the large bowl. Toss the salad thoroughly until all the vegetables are well-coated with the dressing.

Step 9

9. Let the coleslaw sit for at least 10 minutes in the refrigerator to allow the flavors to meld together.

Step 10

10. Stir the coleslaw once more before serving. Enjoy as a refreshing side dish or a topping for tacos or sandwiches.
