Ingredients

  • 400 grams Fresh eel
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Mirin
  • 1 tablespoon Fresh lemon juice
  • 1 teaspoon Fresh wasabi paste
  • 0.5 teaspoon Sea salt
  • 2 Nori sheets
  • 50 grams Pickled ginger
  • 1 Cucumber (thinly sliced)
  • 30 grams Radish sprouts

Directions

Step 1

Begin by cleaning the eel: remove the head and tail, gut the eel, and carefully remove the bones with a sharpened fillet knife. Rinse and pat dry.

Step 2

Slice the eel into thin pieces, approximately 5mm thick, by slicing at a slight angle to maximize the surface area of each slice.

Step 3

In a small bowl, combine the rice vinegar, mirin, lemon juice, and sea salt. Stir until the salt is completely dissolved.

Step 4

Submerge the eel slices in the vinegar mixture and let it marinate for 5 minutes to slightly cure and infuse with flavor.

Step 5

While the eel marinates, use kitchen scissors to cut the nori sheets into thin strips for garnish.

Step 6

Drain the eel slices, pat dry with paper towels, and arrange them neatly on a serving platter.

Step 7

Garnish the eel sashimi with thin nori strips, a small dollop of fresh wasabi paste, and accompaniments like thin cucumber slices and radish sprouts on the side.

Step 8

Serve with pickled ginger on the side for a refreshing contrast to the savory eel flavor.
