Ingredients

  • 100 grams unsalted butter
  • 100 grams all-purpose flour
  • 500 ml beef stock
  • 200 grams cooked beef, finely shredded
  • 1 shallot, minced
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt
  • 2 eggs
  • 200 grams breadcrumbs
  • 0.5 liter oil for frying

Directions

Step 1

In a saucepan, melt the butter over medium heat. Add the minced shallot and sauté until translucent.

Step 2

Stir in the flour and cook for 2-3 minutes, stirring constantly to form a roux.

Step 3

Slowly add the beef stock to the roux, whisking continuously to avoid lumps. Simmer for about 5 minutes until thickened.

Step 4

Add the shredded beef, chopped parsley, nutmeg, black pepper, and salt to the sauce. Stir well to combine.

Step 5

Continue to cook for another 2 minutes, then remove from the heat and let the mixture cool completely.

Once the ragout is cool, shape it into small cylinders about 8 cm long and 2 cm wide.

In a shallow dish, beat the eggs. Place the breadcrumbs in another shallow dish.

Dip each kroket into the beaten eggs, then roll in the breadcrumbs to coat. Repeat to ensure even coating.

Step 9

Heat the oil in a deep fryer or heavy saucepan to 180°C (350°F).

Fry the kroketten in batches, without overcrowding, for about 4-5 minutes or until golden brown and crispy.

Remove with a slotted spoon and drain on paper towels.
