Preheat your oven to 180°C (350°F). Grease a 9-inch springform pan with butter.
In a large mixing bowl, combine the flour, sugar, and salt. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Beat the egg and mix in with the flour-butter mixture. Add in the tablespoon of cold water, mixing just until the dough forms a ball. Do not overwork the dough.
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
While the dough chills, peel, core, and slice the apples into thin wedges. Toss the apple slices with lemon juice in a large bowl.
