Ingredients

  • 5 cups mixed salad greens
  • 0.5 cup sliced almonds
  • 1 medium red bell pepper
  • 1 medium cucumber
  • 1 large carrot
  • 1 medium apple
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Begin by toasting the almonds: Place the sliced almonds in a dry skillet over medium heat. Stir frequently for about 3-5 minutes until the almonds are golden brown and fragrant. Remove from heat and set aside to cool.

Step 2

Wash and dry the salad greens and place them in a large salad bowl.

Step 3

Dice the red bell pepper into small cubes and add to the salad bowl.

Step 4

Peel the cucumber if desired, then slice it into thin rounds, and add to the bowl.

Step 5

Peel the carrot and then, using a grater, shred it finely over the salad.

Step 6

Core and dice the apple, leaving the skin on for color and texture, and add to the salad.

Step 7

In a small bowl, whisk together lemon juice, olive oil, honey, salt, and black pepper until well combined to make the dressing.

Step 8

Pour the dressing over the salad ingredients and toss gently to ensure everything is evenly coated.

Step 9

Sprinkle the toasted almonds over the top of the salad just before serving for maximum crunch.

Step 10

Serve immediately as a refreshing side or a light main dish.
