Ingredients

  • 120 grams Unsalted butter
  • 2 tablespoons Golden syrup
  • 150 grams Granulated sugar
  • 150 grams Plain flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Bicarbonate of soda
  • 75 grams Desiccated coconut
  • 100 grams Rolled oats
  • 0.5 teaspoon Salt

Directions

Step 1

Preheat your oven to 180°C (350°F) and line two baking sheets with parchment paper.

Step 2

In a small saucepan over low heat, melt the unsalted butter and golden syrup together, stirring until smooth. Remove from heat and set aside to cool slightly.

Step 3

In a large mixing bowl, combine the granulated sugar, plain flour, baking powder, bicarbonate of soda, desiccated coconut, rolled oats, and salt. Mix well.

Step 4

Make a well in the center of the dry ingredients and pour in the melted butter mixture. Mix thoroughly until a uniform dough forms.

Scoop tablespoons of the dough and shape them into small balls. Place them on the prepared baking sheets, leaving enough space between each ball to allow for spreading.
