Ingredients

  • 115 grams Unsalted butter
  • 120 grams Granulated sugar
  • 3 units Large eggs
  • 1 teaspoon Vanilla extract
  • 125 grams All-purpose flour
  • 1 pinch Salt
  • 60 milliliters Milk

Directions

Step 1

Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a medium saucepan, melt the unsalted butter over low heat until fully liquid. Remove from heat and let it cool slightly.

Step 3

In a mixing bowl, combine the granulated sugar and eggs. Beat them together with a whisk until the mixture is pale and well incorporated.

Step 4

Add the slightly cooled melted butter and vanilla extract to the egg and sugar mixture. Stir everything until evenly combined.

Step 5

Sift the all-purpose flour and salt into the bowl, and add the milk gradually while mixing. Continue to blend until you have a smooth batter.

Step 6

Drop about 1 tablespoon of batter onto the prepared baking sheet and spread it into a thin circle about 8cm in diameter. Repeat, leaving ample space between each circle for spreading.

Step 7

Bake in the preheated oven for 7-8 minutes or until the edges are nicely golden brown.

Step 8

Working quickly, use a thin spatula to lift the hot wafers from the baking sheet. Immediately roll each wafer around the handle of a wooden spoon or similar object to create the wafer roll shape.

Step 9

Place the rolled wafers seam-side down on a wire rack to cool and set. Repeat with any remaining batter, working in small batches.

Step 10

Allow the wafer rolls to cool completely before serving or storing in an airtight container.
