Ingredients

  • 500 grams Raw prawns, peeled and deveined
  • 2 stalks Green onions, finely chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Fresh coriander, chopped
  • 1 large Egg
  • 2 tablespoons Cornstarch
  • 1 teaspoon Lime zest
  • 1 small Red chili, finely chopped (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 100 grams Panko breadcrumbs
  • 250 milliliters Vegetable oil (for frying)

Directions

Step 1

Place the prawns in a food processor and pulse until they are roughly chopped. You want a mix of fine and chunky for texture.

Step 2

Transfer the chopped prawns to a large mixing bowl.

Step 3

Add the green onions, garlic, coriander, egg, cornstarch, lime zest, red chili (if using), salt, and black pepper to the bowl with the prawns and mix everything until well combined.

Step 4

Using your hands, shape the mixture into small patties, about 5 cm in diameter. You should get approximately 10-12 patties.

Step 5

Spread the panko breadcrumbs evenly on a plate.

Step 6

Gently press each prawn cake into the panko breadcrumbs, ensuring even coverage on both sides. This will create a nice crispy coating.

Step 7

Heat vegetable oil in a large frying pan over medium-high heat. It should be about 1 cm deep for shallow frying.

Step 8

Once the oil is hot (a breadcrumb should sizzle upon contact), carefully add the prawn cakes to the pan without overcrowding.

Step 9

Fry each side for about 3-4 minutes or until golden brown and crisp.

Step 10

Using a slotted spoon, transfer the fried prawn cakes to a plate lined with paper towels to drain excess oil.

Step 11

Serve the crispy prawn cakes immediately with a side of lime wedges or your favorite dipping sauce.
