Ingredients

  • 180 g Polenta
  • 720 ml Water
  • 1 tsp Salt
  • 3 tbsp Olive oil
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 1 tsp Dried oregano
  • 0.5 tsp Black pepper

Directions

Step 1

In a medium saucepan, bring 720 ml of water to a boil and add 1 tsp of salt.

Step 2

Reduce the heat to low and slowly whisk in 180 g of polenta, stirring continuously to prevent lumps.

Step 3

Cook the polenta over low heat, stirring frequently, for about 30 minutes until thick and creamy.

Step 4

Remove the saucepan from heat and stir in 1 tbsp of olive oil.

Step 5

Lightly grease a 9x13 inch baking dish with olive oil and pour the polenta into it, smoothing the top with a spatula.

Step 6

Allow the polenta to cool and set for about 30 minutes, or until it's firm to the touch.

Step 7

Preheat the oven to 220°C (428°F) and line a baking sheet with parchment paper.

Once the polenta is set, carefully turn it out onto a cutting board and slice it into 1/2-inch thick fries.

Step 9

In a small bowl, mix 2 tbsp of olive oil with 1 tsp of garlic powder, 1 tsp of paprika, 1 tsp of dried oregano, and 0.5 tsp of black pepper.

Step 10

Brush the polenta fries with the seasoned olive oil mixture, making sure each fry is well coated.

Arrange the fries on the prepared baking sheet in a single layer, leaving space between each fry.

Step 12

Bake for 25-30 minutes, turning halfway through, until the fries are golden and crispy on the edges.

Remove from the oven and serve hot, optionally with your favorite dipping sauce.
