Directions

Step 1

Peel the yams and cut them into 1/4-inch thick slices. Rinse the slices in cold water to remove excess starch and pat them dry with a clean kitchen towel.

In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and paprika. Whisk them together until well-blended.
