Ingredients

  • 1 large Zucchini
  • 1 large Carrot
  • 1 medium Potato
  • 1 medium Red bell pepper
  • 2 pieces Green onions
  • 1 medium Garlic clove
  • 1 cup Chickpea flour
  • 0.25 cup Water
  • 1 teaspoon Baking powder
  • 1 teaspoon Paprika
  • 0.5 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Cilantro
  • 1 cup Vegetable oil

Directions

Step 1

Grate the zucchini, carrot, and potato into a large bowl.

Step 2

Finely chop the red bell pepper, green onions, and garlic clove, and add to the bowl.

Step 3

Add the chickpea flour, water, baking powder, paprika, ground cumin, salt, and black pepper to the vegetables and mix well until you get a thick batter-like consistency.

Step 4

Chop the cilantro finely and add it to the mixture.

Step 5

Heat the vegetable oil in a deep skillet over medium-high heat.

Step 6

Once the oil is hot (test by dropping a small amount of batter into it – it should sizzle immediately), scoop spoonfuls of the vegetable mixture and carefully drop them into the oil.

Step 7

Fry the fritters for 3-4 minutes on each side until golden brown and crispy.

Step 8

Remove the fritters from the oil and place them on a plate lined with paper towels to absorb excess oil.

Step 9

Serve hot with your choice of sauce or dip.
