Ingredients

  • 500 grams White fish fillets (such as cod or haddock)
  • 200 grams Potatoes
  • 100 grams Panko breadcrumbs
  • 1 large Egg
  • 2 tablespoons Lemon juice
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Fresh dill, chopped
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Olive oil
  • 4 wedges Lemon wedges

Directions

Step 1

Begin by peeling and boiling the potatoes until fork-tender. Once cooked, drain the water and mash them in a bowl. Set aside to cool.

Step 2

Pat the fish fillets dry with a paper towel, then cut them into small chunks. Transfer to a food processor.

Pulse the fish in the food processor just until it’s chopped finely but not pureed.

In a large mixing bowl, combine the chopped fish, mashed potatoes, egg, lemon juice, parsley, dill, garlic powder, onion powder, salt, and black pepper. Mix well until fully combined.
