Ingredients

  • 2 pieces Duck breasts, skin on
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Honey
  • 2 tablespoons Applet cider vinegar
  • 1 tablespoon Molasses
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Ground ginger
  • 4 pieces Rice flour tortillas
  • 1 large Cucumber, julienned
  • 1 large Carrot, julienned
  • 3 stalks Scallions, chopped
  • 4 pieces Lettuce leaves

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Score the skin of each duck breast in a criss-cross pattern without cutting into the meat. This helps render the fat and crisps the skin.

Step 3

Season both sides of the duck breasts with salt and black pepper.

Step 4

Heat a skillet over medium-high heat. Place the duck breasts skin-side down and cook for about 6-8 minutes until the skin is crispy and golden brown. Turn the duck breasts over and cook for another 2 minutes.

Transfer the duck to the oven and roast for 15-20 minutes, until the internal temperature reaches 165°F (75°C). Let the duck rest for 5-10 minutes before slicing thinly.
