Ingredients

  • 1 cup buttermilk

  • 1 cup all-purpose flour
  • 0.5 cup cornmeal
  • 1 teaspoon baking powder
  • 0.5 cup milk
  • 2 large eggs
  • 0 as needed olive oil spray
  • 1 tablespoon optional: fresh parsley, chopped

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil and lightly spray with olive oil.

Step 2

In a large bowl, combine the chicken tenders with the buttermilk and let them soak for about 15 minutes. Use this time to prepare the coating mixture.
