Ingredients

  • 1.5 cups Arborio rice
  • 4 cups Chicken broth
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 1 medium Onion, finely chopped
  • 2 units Garlic cloves, minced
  • 0.5 cup Heavy cream
  • 0.5 cup Parmesan cheese, grated
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

In a medium saucepan, heat the chicken broth over medium heat until warm. Keep the broth warm for later use.

Step 2

In a large skillet over medium heat, melt the butter together with the olive oil.

Step 3

Add the finely chopped onion and sauté for about 5 minutes until it becomes translucent.

Step 4

Add the minced garlic to the onion and cook for another minute until fragrant.

Stir in the Arborio rice, ensuring each grain is coated with the butter and oil. Cook the rice for about 2 minutes until it starts to look pearly.

Gradually add about 1 cup of the warm chicken broth to the rice, stirring frequently. Allow the broth to be absorbed by the rice, then continue adding the broth 1 cup at a time, stirring in between until absorbed. This should take approximately 20 minutes.

Once all the broth is absorbed and the rice is creamy and al dente, reduce the heat to low.

Stir in the heavy cream and grated Parmesan cheese. Mix until the cheese is melted and the rice is creamy.

Step 9

Season with salt and black pepper to taste.
