Ingredients

  • 1 cup Raw cashews
  • 1 medium Potato, peeled and diced
  • 1 medium Carrot, peeled and diced
  • 0.25 cup Nutritional yeast
  • 2 tablespoons Lemon juice
  • 1 tablespoon Apple cider vinegar
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 1 teaspoon Paprika
  • 0.25 teaspoon Turmeric
  • 1 teaspoon Salt
  • 0.125 teaspoon Cayenne pepper (optional)
  • 1.5 cups Water

Directions

Step 1

1. Soak the raw cashews in warm water for at least 1 hour. Drain and rinse before using.

2. In a medium saucepan, add the diced potato and carrot. Cover with water and bring to a boil.

3. Cook for about 15 minutes, or until the potato and carrot are soft and tender. Drain well.
