Ingredients

  • 2 cups Coconut yogurt
  • 2 large Ripe mangoes
  • 1 cup Granola
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Honey or maple syrup
  • 0.25 cup Chopped almonds

Directions

Step 1

Peel the mangoes and slice the fruit away from the pit. Dice the flesh into small cubes and set aside.

Step 2

In a small bowl, mix the coconut yogurt with vanilla extract and honey or maple syrup. Stir well to combine.

Step 3

Take four serving glasses or bowls and begin layering the parfait. Start by adding a few spoonfuls of the coconut yogurt mixture at the bottom of each glass.

Step 4

Add a layer of diced mangoes over the yogurt.

Sprinkle a layer of granola on top of the mangoes.
