Ingredients

  • 2 cups masa harina
  • 1.5 cups warm water
  • 0.5 teaspoons salt
  • 0.5 teaspoons baking powder
  • 0.25 cups vegetable oil (or another soy-free oil)
  • 0.5 cups cornmeal (for dusting)

Directions

Step 1

In a large mixing bowl, combine the masa harina, salt, and baking powder.

Step 2

Gradually add warm water to the masa harina mixture, stirring it with a spoon or your hands until it forms a dough that is not sticky.

Step 3

Knead the dough gently for about 2 minutes until it is smooth and pliable. If the dough is too dry, add a little more water, one tablespoon at a time.

Step 4

Divide the dough into 8 equal portions and roll them into balls.

Step 5

Flatten each dough ball into a thick disk, about 1/2 inch thick, using your hands or a tortilla press lined with plastic to prevent sticking.

Step 6

Heat a large skillet or griddle over medium-high heat and lightly grease it with a teaspoon of vegetable oil.

Step 7

Dust each gordita lightly on both sides with cornmeal and carefully place them on the hot skillet. Cook for about 4–5 minutes on each side until they develop a golden crust and are cooked through the center.

Step 8

Remove the gorditas from the skillet and let them cool slightly. Slice each gordita halfway open horizontally to create a pocket.

Step 9

Serve the gorditas warm, stuffed with your favorite fillings like beans, cheese, avocado, or meats.
