  • 1 teaspoon black pepper
  • 4 medium potatoes
  • 2 tablespoons lemon juice
  • 2 tablespoons parsley

Directions

Step 1

Begin by prepping your vegetables. Dice the onion and garlic, slice the carrots and celery, chop the red bell pepper, and peel and quarter the potatoes. Set these aside.

In a large pot or Dutch oven, heat the olive oil over medium-high heat.

Season the chicken thighs with salt and pepper, then add them to the pot. Sear the chicken for about 4-5 minutes on each side until golden brown. Remove the chicken from the pot and set aside.
