Ingredients

  • 1 pint shucked oysters with their liquor
  • 4 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 1 celery stalk, finely chopped
  • 2 garlic cloves, minced
  • 3 cups whole milk
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon cayenne pepper (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1 loaf crusty bread, for serving

Directions

Step 1

In a large pot, melt the butter over medium heat. Add the finely chopped onion and celery, cooking until softened, about 5 minutes.

Add the minced garlic and cook for another minute until fragrant.

Pour in the oyster liquor (the liquid from the oysters) into the pot. Then add the whole milk and stirring continuously. Bring the mixture just to a simmer without boiling, around 5 to 7 minutes.
