Ingredients

  • 1 pound Chicken breast
  • 1 large Red bell pepper
  • 1 medium Zucchini
  • 1 large Red onion
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 3 Garlic cloves
  • 1 teaspoon Paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Fresh parsley
  • 8 Wooden skewers

Directions

Step 1

Start by soaking the wooden skewers in water for at least 30 minutes to prevent them from burning during grilling.

Step 2

Cut the chicken breast into 1-inch cubes and set aside.

Step 3

Chop the red bell pepper and zucchini into 1-inch pieces. Peel and chop the red onion into similar sized pieces.

Step 4

In a large bowl, whisk together the olive oil, lemon juice, minced garlic cloves, paprika, ground cumin, ground coriander, salt, and black pepper.

Step 5

Add the chicken cubes to the bowl and toss to coat them evenly with the marinade. Cover and refrigerate for at least 15 minutes.

Step 6

Remove the chicken from the refrigerator and start assembling the kebabs. Alternate threading chicken cubes, red bell pepper pieces, zucchini slices, and red onion pieces onto each wooden skewer.

Step 7

Preheat the grill to medium-high heat.

Step 8

Place the skewers on the grill and cook for 12-15 minutes, turning occasionally, until the chicken is cooked through and has grill marks on all sides.

Step 9

Garnish the cooked kebabs with chopped fresh parsley before serving.

Step 10

Serve hot with your choice of dipping sauces or sides.
