Ingredients

  • 1 head Cauliflower
  • 1 can Chickpeas
  • 2 tablespoons Olive oil

  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Cayenne pepper
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Lime juice
  • 8 pieces Corn tortillas
  • 1 sliced Avocado
  • 0.25 cup Cilantro
  • 0.5 cup Red onion

Directions

Step 1

Preheat oven to 400°F (200°C).

Step 2

Cut the cauliflower into small florets and drain and rinse the chickpeas.

Step 3

In a food processor, pulse the cauliflower until it resembles rice. Add the chickpeas and pulse until the mixture is crumbly but not pureed.

Step 4

In a large mixing bowl, combine the processed cauliflower and chickpeas with olive oil, smoked paprika, ground cumin, garlic powder, onion powder, oregano, cayenne pepper, salt, and black pepper. Mix well to coat evenly.
