Ingredients

  • 2 cups Rolled oats
  • 1 cup Peanut butter
  • 0.5 cup Honey
  • 0.25 cup Coconut oil
  • 1 teaspoon Vanilla extract
  • 0.5 cup Chopped almonds
  • 0.5 cup Dried cranberries
  • 0.25 cup Unsweetened cocoa powder
  • 0.25 teaspoon Salt

Directions

Step 1

Line an 8x8 inch baking pan with parchment paper or lightly grease it with coconut oil. Set aside.

In a medium-sized saucepan, combine peanut butter, honey, and coconut oil. Place over low heat and stir until the mixture is smooth and the coconut oil is completely melted. This should take about 3-4 minutes.

Step 3

Remove the saucepan from heat and stir in vanilla extract and unsweetened cocoa powder until well combined.

In a large mixing bowl, combine rolled oats, chopped almonds, dried cranberries, and salt. Add the peanut butter and chocolate mixture from the saucepan into the bowl and mix everything until the oats are fully coated with the chocolate mixture.

Transfer the mixture into the prepared baking pan. Press down firmly using a spatula or the bottom of a glass to ensure the mixture is even and compact.

Refrigerate the bars for at least 1 hour, or until they are firm enough to cut.
