  • 200 grams light corn syrup
  • 60 ml water
  • 2 large egg whites
  • 60 grams honey
  • 1 teaspoon vanilla extract
  • 20 grams unsweetened cocoa powder
  • 100 grams dark chocolate chips (soy-free)
  • 100 grams toasted almonds, chopped
  • 0.25 teaspoon salt

Directions

Step 1

Prepare a baking sheet by lining it with parchment paper and lightly greasing it with oil. Set aside.

Step 2

In a medium saucepan, combine the granulated sugar, corn syrup, and water. Stir over medium heat until the sugar dissolves completely.

Step 3

Increase the heat to medium-high and insert a candy thermometer. Allow the mixture to boil without stirring until it reaches 150°C (300°F).

Step 4

While the sugar mixture is heating, whisk the egg whites in a clean, grease-free bowl until soft peaks form.

Step 5

Once the sugar mixture reaches 150°C, remove it from heat. Slowly pour it into the egg whites, beating continuously with an electric mixer. Continue to beat until the mixture becomes thick and glossy.
