Ingredients

  • 100 grams Cocoa butter
  • 50 grams Cocoa powder
  • 100 grams Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 pinch Sea salt
  • 120 grams Nut butter (almond or cashew recommended)
  • 2 tablespoons Maple syrup

Directions

Step 1

Line a muffin tin with 12 paper cupcake liners and set aside.

Step 2

In a double boiler over low heat, melt the cocoa butter until fully liquid, stirring occasionally.

Step 3

Once melted, remove from heat and sift in the cocoa powder and powdered sugar to the cocoa butter. Stir until the mixture is smooth and well-combined.

Step 4

Add the vanilla extract and a pinch of sea salt, stirring to incorporate fully.

Step 5

In a separate bowl, mix the nut butter with maple syrup until smooth.

Step 6

Spoon about 1 tablespoon of chocolate mixture into the base of each paper liner and gently swirl around to coat the sides slightly.

Step 7

Place the muffin tin in the freezer for 5 minutes to help the chocolate set.

Step 8

Add a layer of nut butter mixture (about 1 teaspoon) on top of the chilled chocolate layer in each cup.

Step 9

Cover the nut butter layer with the remaining chocolate, ensuring the nut butter is completely sealed.

Step 10

Place the muffin tin back in the freezer for an additional 20 minutes or until set.

Step 11

Once set, store the chocolate cups in an airtight container in the refrigerator until ready to serve.
