Ingredients

  • 300 grams Thin poha (rice flakes)
  • 100 grams Peanuts
  • 50 grams Cashew nuts
  • 3 tablespoons Sunflower oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Fennel seeds
  • 3 pieces Dried red chilies
  • 15 leaves Curry leaves
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 1 pinch Asafoetida (hing)
  • 2 tablespoons Raisins

Directions

Step 1

Place the thin poha (rice flakes) in a large sieve or colander and gently shake off any small bits or powder. Set aside.

Step 2

Heat 3 tablespoons of sunflower oil in a large, wide pan or wok over medium heat.

Step 3

Add the mustard seeds, and once they start popping, add the cumin seeds, fennel seeds, and dried red chilies. Stir for about 30 seconds until aromatic.

Step 4

Add the peanuts and cashew nuts to the pan and fry them until golden brown, ensuring not to burn them. This should take about 2-3 minutes.

Step 5

Stir in the curry leaves, turmeric powder, red chili powder, sugar, salt, and asafoetida, mixing well for another minute.

Step 6

Add the raisins, and continue to stir everything together.

Step 7

Reduce the heat to low and add the rice flakes to the pan. Gently mix all the ingredients together until the rice flakes are well coated with the spices and nuts for about 3-4 minutes.

Step 8

Continue to stir intermittently on low heat for another 2-3 minutes to ensure the rice flakes are crispy.

Step 9

Remove the pan from the heat and let the chiwada cool completely before storing it in an airtight container.
