  • 2 pounds Beef brisket
  • 1 can Chipotle peppers in adobo sauce

  • 4 pieces Garlic cloves
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried oregano
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 cups White rice
  • 4 cups Water
  • 0.25 cup Fresh cilantro
  • 1 cup Corn kernels
  • 1 piece Red bell pepper
  • 1 piece Avocado
  • 1 piece Lime

Directions

Step 1

Preheat your oven to 300 degrees Fahrenheit (150 degrees Celsius).

Step 2

Trim excess fat from the brisket and season it with salt and pepper on both sides.

Step 3

In a large Dutch oven, heat olive oil over medium-high heat. Sear the brisket on all sides until browned, about 4 minutes per side. Remove brisket and set aside.

Blend the chipotle peppers in adobo sauce until smooth. Add garlic, cumin, paprika, and oregano; blend again until mixed well.
