Ingredients

  • 250 grams somen noodles
  • 60 ml mirin
  • 30 ml rice vinegar
  • 30 ml fish sauce
  • 180 ml water
  • 1 tablespoon sugar
  • 1 teaspoon ginger, finely grated
  • 2 tablespoons daikon radish, grated
  • 2 tablespoons green onions, finely sliced
  • 2 nori sheets, cut into thin strips
  • 1 tablespoon sesame seeds

Directions

Step 1

Begin by bringing a large pot of water to a boil over high heat. Add the somen noodles to the boiling water and cook according to the package instructions for about 2-3 minutes until al dente.

Step 2

While the noodles are cooking, prepare an ice bath by filling a large bowl with ice and water. Once the noodles are cooked, immediately drain them and transfer to the ice bath to cool completely. This stops the cooking and keeps them firm.

Step 3

In a small saucepan, combine the mirin, rice vinegar, fish sauce, water, and sugar. Place over medium heat and stir until the sugar is completely dissolved. Remove from heat and let it cool to room temperature.

Step 4

Add the finely grated ginger to the cooled sauce, mixing well to combine all the flavors.

Step 5

For serving, arrange the cooled somen noodles in bowls or on a large serving platter. Top with grated daikon radish and finely sliced green onions.

Step 6

Pour the dipping sauce into individual bowls for each person.

Step 7

Garnish the noodles with thin strips of nori and a sprinkle of sesame seeds before serving.

Step 8

Serve the chilled somen noodles with the dipping sauce on the side, allowing each person to dip their noodles in the sauce as they enjoy the meal.
