Ingredients

  • 15 oz canned chickpeas, drained and rinsed
  • 1 cup breadcrumb
  • 1 tbsp ground flaxseed
  • 2.5 tbsp water
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 0.5 tsp smoked paprika
  • 0.25 cup fresh parsley, chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp olive oil

Directions

Step 1

In a small bowl, combine the ground flaxseed and water. Stir well and let sit for about 5 minutes to thicken. This will serve as an egg replacement.

Step 2

In a food processor, combine the drained and rinsed chickpeas and pulse until a coarse mixture forms. Avoid over-processing as you want some texture to remain.

Step 3

In a large mixing bowl, combine the processed chickpeas, thickened flaxseed mixture, breadcrumbs, chopped onion, minced garlic, ground cumin, ground coriander, smoked paprika, chopped parsley, salt, and black pepper. Mix well using your hands until all ingredients are well incorporated.
