Place each chicken breast between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to pound the chicken breasts to about 1/4-inch thickness.
In a large non-stick skillet, heat 2 tablespoons of olive oil over medium-high heat.
Season the pounded chicken breasts with salt and black pepper on both sides.
