Ingredients

  • 12 oz wide rice noodles
  • 1 lb chicken breast, thinly sliced

  • 2 tbsp oyster sauce
  • 1 tbsp dark brown sugar
  • 2 tbsp sesame oil
  • 2 tbsp canola oil
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 medium onion, sliced
  • 1 bell pepper, sliced
  • 1 cup bean sprouts
  • 3 green onions, chopped
  • 0.5 tsp black pepper
  • 1 tsp cornstarch
  • 2 tbsp water

Directions

Step 1

Soak the rice noodles in hot water for about 20 minutes or according to package instructions until they are softened. Drain and set aside.

Step 2

In a small bowl, mix coconut aminos, oyster sauce, dark brown sugar, and black pepper. Set aside.

Step 3

In another small bowl, combine the cornstarch with water to create a slurry. Set aside.

Step 4

Heat a large pan or wok over medium-high heat, and add 1 tablespoon of canola oil.

Step 5

Add the chicken pieces and stir-fry until they are lightly browned and cooked through, about 5-6 minutes. Remove from the pan and set aside.
