  • 1 large Yellow bell pepper, sliced
  • 8 ounces Cremini mushrooms, sliced
  • 28 ounces Canned diced tomatoes, with juice
  • 2 tablespoons Tomato paste
  • 0.5 cup Dry white wine
  • 1 cup Chicken broth
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Dried rosemary
  • 1 Bay leaf
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Season the chicken thighs with salt and pepper on both sides.

In a large Dutch oven or deep skillet, heat the olive oil over medium-high heat.

Add the chicken thighs, skin-side down, and sear until golden brown, about 5 minutes per side. Remove the chicken and set aside.
