Ingredients

  • 16 ounces fresh spinach
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 medium onion, chopped
  • 3 tablespoons cornstarch
  • 2 cups whole milk
  • 8 ounces cream cheese
  • 1 cup Parmesan cheese, grated
  • 1 cup mozzarella cheese, shredded
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon nutmeg, grated
  • 0.5 cup breadcrumbs

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Wash and dry the spinach, then roughly chop it and set aside.

Step 3

In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and chopped onion. Sauté for 5 minutes until the onions become translucent.

Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and set aside.

In a medium saucepan, mix the cornstarch with some of the whole milk to form a slurry. Then add the remaining milk to the saucepan.

Place the saucepan over medium heat and stir in the cream cheese. Cook, stirring often, until the mixture thickens and the cream cheese is melted, about 5 minutes.

Remove the saucepan from the heat and stir in the grated Parmesan cheese, salt, black pepper, and nutmeg. Mix well until the cheese has melted and the sauce is smooth.
