Ingredients

  • 2 cups Rice flour
  • 1 cup Chickpea flour (besan)
  • 1 teaspoon Carom seeds (ajwain)
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Red chili powder
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Asafoetida (hing)
  • 1 teaspoon Salt
  • 2 tablespoons Ghee or clarified butter
  • 1.25 cups Water
  • 2 cups Vegetable oil

Directions

Step 1

In a large mixing bowl, combine rice flour, chickpea flour, carom seeds, cumin seeds, red chili powder, turmeric powder, asafoetida, and salt.

Step 2

Heat ghee in a small pan and pour it over the flour mixture. Mix it well with a spoon.

Step 3

Gradually add water, little by little, and knead into a soft yet firm dough. The dough should not be too sticky or too dry.

Cover the dough with a damp cloth and let it rest for 10 minutes.

Divide the dough into portions and load it into a chakri or murukku press fitted with a star or multi-hole disc.

Heat vegetable oil in a deep frying pan over medium heat. To test, drop a small piece of dough into the oil; it should rise to the surface quickly without browning immediately.

Press the dough in a circular motion directly into the hot oil or onto a parchment paper sheet for easier handling, then slide it into the oil carefully.

Fry the chakris in batches until they are golden brown and crispy, about 2-3 minutes per side. Stir gently so they cook evenly.

Remove with a slotted spoon and drain on paper towels to absorb excess oil.
