Directions

Step 1

Preheat your smoker to 250°F (121°C). You can use any wood chips, but cherry or hickory add excellent flavor to the beef.

Trim the beef brisket of excess fat, leaving about 1/4 inch of fat cap for flavor. Slice the brisket into 1 1/2-inch cubes.
