Ingredients

  • 1.5 pounds beef brisket
  • 8 ounces rice noodles
  • 8 cups beef bone broth
  • 1 large onion
  • 3 inches fresh ginger
  • 1 piece cinnamon stick
  • 3 whole star anise
  • 4 whole cloves
  • 2 whole cardamom pods
  • 2 teaspoons sea salt
  • 1 tablespoon rock sugar
  • 2 tablespoons fish sauce
  • 2 cups bean sprouts
  • 1 cup fresh basil leaves
  • 1 cup fresh cilantro leaves
  • 1 juice lime
  • 4 stalks green onions
  • 1 sliced jalapeño pepper

Directions

Step 1

Place the beef brisket into a large pot and cover with water. Bring to a boil for 5 minutes, then drain and rinse the brisket to remove impurities.

Step 2

Toast the onion and ginger over an open flame or under a broiler until charred. Set aside.

In a large stockpot, combine the charred onion, ginger, cinnamon stick, star anise, cloves, cardamom pods, and beef broth. Add the parboiled brisket into the pot.
