  • 4 eggs
  • 2 small potatoes
  • 1 small red bell pepper

  • 1 lime
  • 0.25 cup fresh cilantro

Directions

Step 1

Dice the potatoes into small cubes and finely chop the red bell pepper and onion.

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced potatoes, spreading them evenly in the skillet.
