  • 4 pieces lamb shanks
  • 3 tablespoons olive oil
  • 1 piece large onion, chopped
  • 2 pieces carrots, chopped
  • 2 pieces celery stalks, chopped
  • 4 cloves garlic cloves, minced
  • 2 tablespoons tomato paste
  • 14 ounces canned diced tomatoes
  • 1 cup red wine
  • 2 cups beef or lamb stock
  • 3 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 2 leaves bay leaves
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons parsley, chopped

Directions

Step 1

Preheat your oven to 325°F (163°C).

Step 2

Heat the olive oil in a large, oven-safe pot over medium-high heat.

Step 3

Season the lamb shanks with salt and pepper. Brown them on all sides in the pot, about 8-10 minutes. Remove the lamb shanks and set aside.

In the same pot, add the chopped onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
