Ingredients

  • 500 grams Bottle gourd (lauki)
  • 2 tablespoons Coconut oil
  • 1 teaspoon Cumin seeds
  • 1 large Onion, finely chopped
  • 4 units Garlic cloves, minced
  • 1 inch piece Ginger, minced
  • 1 large Tomato, finely chopped
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 2 teaspoons Coriander powder
  • 1 teaspoon Garam masala
  • 1 teaspoon Salt
  • 1 cup Water
  • 2 tablespoons Fresh cilantro, chopped

Directions

Step 1

Peel the bottle gourd and cut it into 1-inch cubes.

Step 2

Heat the coconut oil in a large pan over medium heat.

Step 3

Add the cumin seeds to the oil and let them sizzle for a few seconds until fragrant.

Step 4

Add the chopped onion and sauté until it turns golden brown.

Step 5

Stir in the minced garlic and ginger, cooking for another minute until aromatic.

Add the chopped tomato and cook until it becomes soft and the oil starts to separate from the mixture.

Mix in the turmeric powder, red chili powder, coriander powder, and salt. Cook for a couple of minutes, stirring frequently.

Add the bottle gourd cubes to the pan and mix well to coat them in the spice mixture.
