Ingredients

  • 500 g bitter gourd (karela)
  • 1 large onion
  • 2 medium tomato
  • 2 tablespoons coconut oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 tablespoon coriander powder
  • 0.5 teaspoon garam masala
  • 1 teaspoon salt
  • 10 leaves curry leaves
  • 3 garlic cloves
  • 1 inch ginger
  • 1 green chili
  • 1 cup water
  • 2 tablespoons fresh coriander leaves

Directions

Step 1

Rinse the bitter gourds thoroughly. Slice them into thin rounds and remove the seeds if they are tough.

Step 2

Sprinkle 1/2 teaspoon of salt over the sliced bitter gourds and set aside for 15 minutes to reduce the bitterness. After 15 minutes, rinse them under running water and drain well.

Step 3

Finely chop the onion, tomatoes, garlic, ginger, and green chili. Set aside.

Step 4

Heat coconut oil in a pan over medium heat. Add mustard seeds and cumin seeds. Let them splutter.

Step 5

Add curry leaves, chopped garlic, ginger, and green chili. Sauté for 1 minute until aromatic.

Add the chopped onion to the pan and sauté until it turns golden brown.

Step 7

Add chopped tomatoes and cook until they become soft and the oil starts to separate.

Mix in turmeric powder, red chili powder, coriander powder, and salt. Stir well to combine.

Add the sliced bitter gourd to the pan. Stir to coat the bitter gourd with the spice mixture.

Pour in 1 cup of water, cover, and let the curry simmer for about 15 minutes or until the bitter gourd is tender and cooked through.

Add garam masala and stir well. Let it cook for an additional 2-3 minutes.

Garnish with fresh coriander leaves and serve hot with rice or roti.
