  • 3 pounds Beef chuck roast
  • 4 whole Guajillo chiles
  • 2 whole Ancho chiles
  • 2 teaspoons Dried oregano
  • 1 teaspoon Ground cumin
  • 1 whole Cinnamon stick
  • 4 whole Cloves
  • 6 whole Garlic cloves
  • 3 whole Bay leaves
  • 0.25 cup White vinegar
  • 4 cups Beef broth
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Vegetable oil
  • 0.5 cup Fresh cilantro

Directions

Step 1

Trim the beef chuck roast of excess fat and cut it into large chunks, approximately 3 inches in size.

Step 2

Place the guajillo and ancho chiles in a bowl with hot water to hydrate for about 10 minutes or until they are soft.

Step 3

In a blender, add the hydrated chiles (seeds removed if desired for less heat), oregano, ground cumin, cinnamon stick, cloves, garlic cloves, white vinegar, 1 cup of beef broth, and blend until smooth.

Season the beef chunks with salt and pepper evenly.
