Ingredients

  • 1 cup Gram flour (besan)
  • 2 medium Potatoes, sliced thinly
  • 1 large Onion, thinly sliced
  • 2 pieces Green chili, finely chopped
  • 0.5 cup Fresh cilantro, chopped
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 0.5 teaspoon Garam masala
  • 0.25 teaspoon Baking soda
  • 1 teaspoon Salt
  • 0.75 cup Water
  • 2 cups Vegetable oil (for frying)

Directions

Step 1

In a large mixing bowl, combine the gram flour, cumin seeds, turmeric powder, red chili powder, garam masala, baking soda, and salt.

Step 2

Gradually add water to the dry ingredients, whisking continuously to form a smooth and slightly thick batter without lumps.

Step 3

Add the sliced potatoes, sliced onion, chopped green chili, and cilantro to the batter. Mix well to ensure all the vegetables are evenly coated.

Step 4

Heat vegetable oil in a deep frying pan over medium heat. To check if the oil is ready for frying, drop a small amount of batter into the oil; it should sizzle and rise to the surface.

Step 5

Using a spoon or your hands, carefully drop small portions of the batter into the hot oil, ensuring not to overcrowd the pan.

Step 6

Fry the bhajia until they are golden brown and crispy on the outside, about 3-4 minutes per batch.

Step 7

Remove the bhajia with a slotted spoon and drain on paper towels to remove excess oil.

Step 8

Serve hot with your favorite chutney or dipping sauce.
