Ingredients

  • 4 large Russet potatoes
  • 150 grams Ground beef or chicken (optional)
  • 3 medium Shallots
  • 2 cloves Garlic
  • 3 tablespoons Fresh cilantro leaves
  • 1 teaspoon Black pepper
  • 1 teaspoon Ground coriander
  • 1 teaspoon Salt
  • 2 large Eggs
  • 4 tablespoons Bread crumbs
  • 1 cup Vegetable oil

Directions

Step 1

Peel and chop the potatoes into small cubes. Boil in salted water until tender, about 15 minutes. Drain well and mash the potatoes until smooth. Set aside to cool.

Step 2

Finely chop the shallots and garlic. If using ground meat, heat a tablespoon of vegetable oil in a skillet over medium heat. Cook the ground meat until browned and fully cooked. Remove from heat and let it cool.

Step 3

In a large bowl, combine the mashed potatoes, cooked meat (if using), chopped shallots, garlic, chopped cilantro, black pepper, ground coriander, and salt.

Step 4

In a separate bowl, lightly beat one egg, and then add it to the potato mixture along with the breadcrumbs. Mix everything thoroughly until all ingredients are well incorporated.

Shape the potato mixture into small patties, about 5 cm in diameter and 1.5 cm thick.

In a shallow dish, beat the remaining egg. Dip each patty in the egg, ensuring it's fully coated.

Heat vegetable oil in a deep frying pan over medium-high heat. Test the oil by dropping a small piece of patty in it; if it sizzles and rises to the surface, the oil is ready.
